Keto Peanut Butter Chocolate Chip Snack Cake
1/2 cup butter melted
⅔ cup xylitol (non corn)
1/2 cup natural peanut butter
2 eggs at room temp
1 Tablespoon vanilla extract
1 1/3 cup ultra fine almond flour
3/4-1 teaspoon salt (depending on how seasoned your pb is)
3/4 teaspoon baking powder
2/3 cup sugar free chocolate chips
preheat to 350°F and put oven rack in the lower third of your oven
Line a 9×9-inch baking pan with parchment paper.
Add butter, sweetener and peanut butter to a large bowl and whisk until thoroughly combined, the mixture will be very thick.
Add the eggs and vanilla whisk until smooth.
Add the ultra fine almond flour, salt and baking powder and whisk until fully blended. Fold in sugar free chocolate chips. Put mixture in prepared baking dish.
Bake for 20-30 minutes until the center is set (Don’t over cook they will be dry..)
