Keto Snickerdoodles!? Say, WHAT?!

Okay, so I know it’s not the NEW year — at least it’s not the NEW year just yet, but if you are wanting to get a jump on those resolutions and not wanting to feel like you were on any kind of a diet, then this is the cookie recipe for you!

These taste delicious and most people won’t be able to tell there is no flour OR sugar in these Snickerdoodles!!!

They are easy to make and taste just like their sugary counterpart.

INGREDIENTS
1 1/4 cup almond flour
2 tablespoons coconut flour
1/2 teaspoon xanthan gum
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1 pinch of salt
1 stick butter at room temperature
1/3 cup erythritol
2 teaspoon vanilla extract
1 egg

CINNAMON SUGAR
3 tablespoons xylitol
2 teaspoons cinnamon

Now that you’ve got all the stuff — it’s time to make some holiday magic!

INSTRUCTIONS
Preheat oven to 375°F

Add almond flour, coconut flour, xanthan gum, baking soda, cream of tartar and salt to a bowl. Whisk until thoroughly combined.

Cream butter and sweetener in an electric mixer until light and fluffy. Add in vanilla extract and egg. Add the flour mixture. Mix until just incorporated.

Scoop out cookie rounds using a tablespoon. Roll in “cinnamon sugar” mix and flatten slightly.

Transfer cookies to cookie sheet with parchment paper or a silicone mat and bake for 6-8 minutes, until just very lightly golden. Allow to cool for 10 minutes and enjoy!

Store in an airtight container for 5 days.
