This is the ultimate Southern fried chicken sandwich

The fried chicken sandwich is already pretty darn Southern as far as foods go. But add pimento cheese, peach coleslaw and spicy mayo, and you’ve got something truly special.

That is exactly what the folks at Boxcar Betty’s in Charleston, South Carolina are doing with their signature sandwich, The Boxcar.

The inspiration for the sandwich was to go all in on Southern cooking.

You start with a crispy, juicy piece of fried chicken. Then pick up the cheese – creamy, decadent and delicious. Then add the coleslaw, which is more of a vinegar base, so you get a little bit of tang from that and the house-made pickles. Then you seal it all off with just the slightest kick from the spicy mayo.

It’s undeniably messy, but that’s half the fun!
